Back after a weekend away and wanted to cook up something simple and wholesome in minutes that we could all enjoy. Having frozen uncooked prawns in the freezer is a godsend along with coconut cream and my homemade yellow curry paste. Chuck in a few veg and serve up with my favourite wild and brown rice mix (cooked in veggie stock) and you have a heavenly meal PACKED with flavour and nutrients. I keep the chilli minimal for the boys but have noticed they are managing better with it which is exciting! 🌶🌶🌶
