For the fries: 
Preheat oven 400 Celsius, line a baking sheet with parchment paper, chop potatoes evenly and toss with salt, pepper and a drizzle of olive oil and a little garlic powder. Spread on baking sheet without overlapping and bake for 20-25 mins. Flip over and bake for another 10 mins.
For carrot noodles and salad dressing:
Wisk together two tbsps of favorite oil
1 tbsp tamari or soy sauce
juice of lemon
1 tbsp minced garlic 
1 tbsp minced ginger
Handful of finely chopped fresh cilantro
1 tsp siracha,
1 tsp mayple syrup or equivalent 
Blend of you want it to be smooth.
Marinate carrot noodles in this for 10-15 mins to soften them. Plus rest of dressing into your Buddha bowl. Add chickpeas, rice, cucumbers, cherry tomatoes, avocado, arugula with potatoes into bowl. Enjoy
