Chocolate Chip Protein Truffles

Ingredients
1. Half a cup of raw cashews 🐿
2. 1/4 cup protein powder (I use 100% Pea Protein - Natural Flavour from @phytopro) 
3. 2 tbsp Almond Butter ( @natureschoicesa)
4. 1 tbsp raw honey 
5. 1 tbsp Maca Powder 
6. 2 tsp cinnamon 
7. 1/4 tsp veg salt 
8. 1/4 vanilla paste or powder 
9. 3 tbsp water 
10. 2 blocks Lindt Excellence Dark (geez I really struggled to get my youngest cub to stop touching the chocolate! )

1. In a food processor mix the cashew nuts until crumbly 
2. Add the protein powder (plain or vanilla flavoured protein powder will do), almond butter, honey, Maca powder, cinnamon, salt and vanilla paste/powder. Process or mix by hand. 
3. Add the water slowly until a dough forms (literally looks like one large ball of  cookie dough 
4. Lastly add the chocolate - use the pulse  function on the food processor as you still want some nice chocolate chip chunks in your Truffles. •••••••••••••••••••••••••••••••••••••••••••••••••

Voila!  you have one delicious snack for work, post-workout or just because - for me this is the ultimate cookie dough fulfillment! ...I look forward to eating these tomorrow under the piles of admin I have to get through . •••••••••••••••••••••••••••••••••••••••••••••••••
