Dinner: Baked sweet potato stuffed with blackened corn, cheese, jalapeños & salsa.
Sometimes when you&039;re cooking at home you have to admit to yourself that the empty plate looks better than the jumble you put in it! Sure, it would have looked great with 1 spoonful of corn on the plate but that wasn&039;t what I was going to eat.
I made the corn by sautéing 1/2 a red onion, chopped chili and garlic until soft and then adding a tin of drained sweet corn and a tsp of cumin. Stirred infrequently to allow it to become charred and blackened in places. A perfect bowl of happy carbs for a blustery cold night.
