Dinner: Heart Attack Mac
The luxest macaroni & cheese in the world, please don&039;t read further if you&039;re on a diet (or maybe just eat the salad). Start with a liter of whole milk and 1c cream, and slowly heat till just boiling with bay leaves, peppercorns, 1/2 a white onion, mustard powder & freshly grated nutmeg. Sieve out the solids, then make a roux in a separate pot with 5T butter & 5T flour – cook out the roux for 4 mins to remove the floury taste, then slowly add the milk, whisking constantly, & cook until smooth and thick. Remove from the heat & add 1c each of grated white cheddar, gruyère and mozzarella (I KNOW). Season with cayenne pepper, more nutmeg, mustard powder & black pepper.
Add 3c of cooked tiny pasta – I used Lumachette – cooked for 2 mins short of cooking time, stir well and let sit for 15 mins to absorb. Top with grated cheddar and grill in the oven until crispy and bronzed. Serve with a green salad (butter lettuce, finely sliced onion, mustard vinaigrette). Serves 6-8 depending how greedy you are
