Dinner: Za&039;atar spiced roast aubergine, roast sweet potato, tahini dressing.
Dinner was quick, late, and eaten standing up in my kitchen. After post post-yoga wine, I would normally have leftovers but decided to quickly throw this together.
I roasted cubed aubergine tossed in salt, pepper, chile flakes, za&039;atar mix and olive oil under the grill for 30 mins, warmed up last night&039;s whole baked sweet potato (it just goes so caramelly and delicious when you do it whole in the skin ) and my favourite tahini sauce: 2T tahini, 2T lemon juice, 6T boiling water and salt & pepper shaken up in a jar. Topped with more za&039;atar & chile flakes.
