Here's a bowl of the tastiest quinoa fried rice I just made  I used coconut oil to light fry the quinoa and then added: corn, carrots, peas, mushrooms, egg, 2 tbsp of Japanese ponzu and topped with chopped spring onion. (I also squeezed some lime on top which was delish) ️
