I made vegan tofu curry for the first time and it was TOO GOOD .
Started by frying onions, chickpeas, firm tofu cubes and spinach in olive oil with a teaspoon of tumeric and 2 crushed garlics. Once browned I added a cup of unsweetened coconut milk and another pinch of turmeric, chilli flakes, pepper and salt. Allow it to simmer and top with spring onion and squeeze half a lime! .
