Lemon, white chocolate & pistachio fudge by @sobeautifullyreal
4 cups dissected coconut
1/2 cup coconut nectar or mayple syrup
1/3 cup melted cocoa butter
Zest of two large lemons
1/4 cup of Lemon juice
1/4 tsp salt
1/2 tsp vanilla powder
3-4 handfuls chopped pistachios
1. Blend the coconut first in a food processor for 6-7 mins until silky smooth liquified.
2. Add the rest of the ingredients except the pistachios and process until smooth.
3. Spread the mixture evenly into a small baking tin and then top with the pistachios, pressing with your hands to keep the fudge flat.
4. Keep in fridge for 1-2 hours until firm enough to enjoy
