Lunch: chopped salad with charred corn, tomato, cucumber, sesame seeds, creamy tahini dressing and pickled chillis.
How many leftovers can you spot in this salad? Today has been a bit of a mare so lunch was late (again) and a collection of everything in my fridge – this is where meal prep comes in handy! I used leftover charred corn (from my sweet potato dinner a couple of nights ago) and leftover Israeli salad, dumped it in a bowl with chopped butter lettuce and leftover tahini dressing from last night. Topped with feta, sesame seeds and the only thing I actually did make, chilli Quickle (quick pickle – geddit?). The quickle is simply sliced chillis in some rice wine vinegar, with a pinch of sugar and a pinch of salt, blitzed in the microwave for 30seconds 🌶
