Mediterranean stuffed sweet potatoes with vegan sour cream tzatziki by @3.bunnies 
Ingredients:
4 large baked sweet potatoes 
Chickpeas 
Chipped vine ripe tomatoes 
Sliced artichoke hearts 
Sliced black olives 
Chopped red onion
Chopped parsley 
Arugula
for the tzatziki:
1 1/2 cup vegan sour cream
1 cup shredded cucumber 
2 tsp lemon juice
1tsp garlic paste
1 tsp dill
1/2 tsp pink Himalayan salt
1/2 tsp olive oil
1/8 black pepper
Directions 
1.Split open baked potatoes and allow to cool off for a few minutes. In a large bowl combine equal amounts of chickpeas, artichokes, olives and onion. Stir well and finish with parsley.
2. Once potatoes are ready add Arugula followed by filling. Combine all ingredients for sauce into a bowl and add to each potato. Garnish with fresh avocado & enjoy
