Summer weather calls for yummy salads. Made this lentilbowl inspired by @sarahgrahamfood .
I used redcabbage as a base which is so good for you and your colon and packed with vitamin U. .
The butternut is roasted in oliveoil, cumin and coriander and then mixed into the cabbage and lentil.
The dressing really finishes it off which is a mixture of:
• 1 tbsp olive oil
• 2 tbsp balsamic vinegar
• 1 squeeze of a lemon
• 1 tsp honey
• 1 tsp mustard
And then topped with fresh mint
