This season's favourites include asparagus salad with crispy pancetta & pickled quail's eggs, cold butter-poached prawns with lemon & herb salad, crispy white bait with lime aioli, marinated lamb pintxos with salsa verde, burrata caprese with heirloom tomatoes & aged balsamic, and butternut ravioli with sage butter & gorgonzola crumble.
