This raw broccoli & cauliflower salad is seriously delicious and I never have any left over EVER. Its one of those salads you keep coming back at pick at for more! Raw Broccoli is not one of my favourite things but with this asian style peanut dressing I could eat bowlfuls! Recipe below:

Break down 1/2 a head of broccoli & cauliflower the same size into tiny florets or slice finely. Sprinkle with salt and 1/2 a very finely chopped red onion.
In a little blender place 1 tbsp smooth sugar free peanut butter, dash fish sauce, zest of 1/2 lime, squeeze of 1/2  lime, 1 tbsp honey or maple syrup, 1 tsp toasted sesame oil. Blend and then add enough water to make it a consistency that is pourable. Drizzle it all over the raw veggies and mix gently taking care to cover all the little florets up in the dressing. Serve immediately. If making before had only dress at the last minute!
