We had the most delicious simple supper last night... puy lentils cooked in onion stock  (one of my favourite pulses ever) with roasted cinnamon carrots, green beans and sundried tomatoes, pan fried haloumi and a tahini dressing. Puy lentils are a great source of vegetable protein and cook very easily.. no need to soak! Both my boys wolfed this down
